Gujarati Carrot and Peanut Salad

Ingredients

2 cups grated carrots

1/2 cup chopped salted peanuts

3 tablespoons lemon juice

1/2 teaspoon salt

1 teaspoon white sugar

1 green chile pepper seeded and diced

2 tablespoons finely chopped fresh

cilantro

Description

A refreshing Indian salad that is the perfect complement to a curry meal. The peanuts add a wonderful nuttiness to this simple and tasty salad.

Directions

In a medium serving bowl, toss together the carrots and peanuts.

In a separate bowl, whisk together the lemon juice, salt, sugar, chile pepper and cilantro.

Pour over the carrots and stir gently to coat. Serve immediately.
